Common parsley.Parsley belongs to the Apiaceae family of plants and is related to common culinary herbs like carrots, parsnips, and celery. It's a biennial plant with a fleshy root and an erect stem that grows up to 3-4 feet tall in its second year. The plant has bright green leaves with a feather-like appearance, featuring three distinct leaflets that are wedge-shaped at the base and deeply incised. The leaflets can be rhomboidal-ovate or rounded, depending on the variety. Some parsley varieties have flat leaves, while others are more compact and curly. As the plant matures, its upper leaves become narrower and less divided, eventually forming simple, three-part leaves near the top. In midsummer, small yellow-green flowers bloom in dense clusters at the top of the stem. The seeds are tiny, ribbed, and ovate, with a gray-brown color. They're about 1 line long and have a distinctive shape, featuring three elevated ridges on the back and two smaller ridges on the sides.

The plant emits a pleasant fragrance. Its medicinal components include the seeds, herb, and root. While fresh, the root has an agreeable scent and a sweet, slightly spicy flavor. The root and herb contain small amounts of volatile oil, whereas the seeds have larger quantities.

How to use:

Hot Infusion:

To make a tea using dried herbs or flowers, combine 2-3 tablespoons of the dried material in a cup or teapot. Pour hot water over it, then cover with a lid for 10-30 minutes. This process extracts antioxidants, enzymes, vitamins, flavonoids, and volatile oils from the botanicals. Strain and press out as much liquid as possible before serving.

Tips:

  • Herbal teas can be sweetened using honey, natural fruit juices, stevia leaf powder, or licorice root powder.
  • Freeze tea in ice trays to create ice cubes or use pop molds for homemade pops.
