Common parsley.Parsley belongs to the Apiaceae family of plants and is related to common garden vegetables such as carrots, parsnips, and celery. It's a biennial plant with a fleshy root and a smooth, branching stem that grows up to 3-4 feet tall in its second year. The leaves are bright green, feather-like, and finely divided, with leaflets that are wedge-shaped at the base and deeply incised. Some varieties have flat leaves, while others are more compact and curly. As you move up the plant, the leaves become narrower and simpler, eventually forming a cluster of linear segments. In midsummer, parsley produces small, yellow-green flowers in dense clusters. The seeds that follow are tiny, ribbed, and ovate, with a gray-brown color.

The plant emits a pleasant aroma. Its medicinal components include the roots, herbs, and seeds. The root has a mild scent and a sweet, slightly spicy flavor, which is best appreciated when fresh. It contains a small amount of volatile oil, whereas the seeds contain more.
